positive living pot luck

Another awesome pot luck luck hosted by the Positive Living trio in Bath.  We were treated to a wide array of raw treats including crackers & dips, salads, pates & puddings.  Here are a few of the treats from the evening (sorry folks, not all images came out clearly so I can't do the evening justice):
sweet potato & maple dip
cacao & corn tortillas

spouted salad & spiralised courgette
beetroot & seaweed crackers

Regular pot-luckers are now getting quite used to the familiar sight of Simon's trug full of foraged goodies.  Last week in Bristol we sampled wild quinoa and freshly picked hemp leaves, mint, beans and tomatoes.  Yesterday in Bath, Simon brought along some lovely achocha & tomatillos:

tomatillos

achocha

Achoca, part of the cucumber family originating from South America.  Wikipedia tells me that they can be juiced during a fast and can help control cholesterol, blood pressure and reduce obesity - nice!
Thanks to everyone for the fab feedback about the cake, I'm glad it went down so well.  It was based on Russell James' beetroot and pomegranate cake who I highly recommend you follow for impressive recipes - here's a link to his recipe
I'll be setting dates for the next pot luck in Bristol soon so will let you know as soon as it's set up ;-)
